Perrunas (Cookies) —also known as perrunillas—are a traditional pastry hailing from La Mancha and various other Spanish regions. They feature a dry, slightly rough texture that simply melts in the mouth. Recipes and shapes vary by locality, and in some places these treats are regarded as “convent sweets,” lovingly crafted by nuns.
